1) Hibiscus Tea

Ingredients:
¼ cup dried Hibiscus Flowers
4 cups cold filtered Water
Ice, for serving
Sweetener of choice, such as sugar, maple syrup, honey, or agave, optional
1 small bunch fresh Mint, for garnish
Method:
Place the hibiscus flowers in a pitcher. Add the water, stir to combine, and chill until bright red, at least 20 minutes. For a deeper colour and flavour, chill overnight.
Pour the tea through a fine mesh strainer set over a bowl or pitcher to remove the hibiscus flowers. Pour into glasses filled with ice and sweeten to taste, if desired.
Garnish with fresh mint.
2) Kokum Sharbat

Ingredients:
200g dried or semi-dried Kokum
4 cups Water divided
200g white Sugar
1 Tsp roasted Cumin Powder/ Jeera
1 Tsp Green Cardamom powder/ Elaichi
2 Tsp Black Salt
½ Tsp Black Pepper Powder/ Kali Mirch
Method:
Rinse kokum with water and soak it in 2 cups of water for 2 hours.
Transfer the soaked kokum along with the water to a blender and blend to make a smooth paste.
Add the kokum paste to a pan along with sugar, the remaining 2 cups of water, cumin powder, ground cardamom, black salt, and black pepper powder. Mix well to combine.
Cook this mixture on medium-low heat for 25-30 minutes, stirring a few times.
Remove the pan from heat and let the mixture cool down to room temperature.
Pass the mixture through a fine-mesh strainer. Press with the back of a spoon to get as much extract as possible. Discard the leftovers.
To make the sherbet, pour 3 tablespoons of kokum concentrate into a glass and top up with chilled water or club soda.
3) Sattu Ka Sharbat

Ingredients:
1.5 Litres Chilled Water
6 Tbsp Sattu/ Roasted Black Chickpea Flour
4 – 6 Tbsp Sugar Or Jaggery Powder – add as per taste
¼ Tsp Black Salt/ Kala Namak
Method:
Take chilled water in a jug
Add 2 tbsp sattu for each glass required
Add sugar or jaggery as per taste. I usually add 2 to 3 teaspoons of sugar or jaggery powder per serving.
Add a pinch of black salt to each glass. For some tang, you can also add lemon or lime juice.
Stir and mix everything very well.
Serve after mixing. The flour settles down, so if serving later, do stir and serve.
4) Watermelon Lemonade

Ingredients:
4 cups diced seedless watermelon
Juice from 2 lemons
2-3 tablespoons of honey
4 cups of cold water
Ice cubes
Method:
Blend diced watermelon, lemon juice, and honey in a blender until smooth.
Sieve the watermelon mixture.
Add cold water; stir well to combine everything.
Chill for at least one hour in the fridge.
Serve over ice with or without garnishing it with watermelon slices.
5) Strawberry, Basil, and Lime Infused Water

Ingredients :
1 cup sliced strawberries
A bunch of fresh basil leaves
1 thinly sliced lime
4 cups of cold water
Ice cube
Method:
In a large jug, mix sliced strawberries, fresh basil leaves, and lime slices.
Pour the cold water into the pitcher and stir softly so that the ingredients blend well.
Keep it in the refrigerator for a minimum of 2 hours to let flavours infuse.
Serve with ice cubes on top!
6) Mango Lassi

1 cup yogurt, 1/2 cup chopped mangoes (or mango pulp), 1-2 tbsp sugar or honey, 1/4 tsp cardamom powder.
Method:
